This week felt like a whirlwind! We ha
d 5th grade camp for work for two days, and between the long days and the hour-and-twenty-minute drive each way, I was completely exhausted. By the time I got home each evening, I didn’t have much energy left for anything else. As a result, not much got accomplished during the week, and I found myself feeling a bit behind on everything.
Thankfully, the weekend arrived, and I was able to switch into productivity mode.
Saturday started with a quick grocery shopping trip before I spent most of the day working on T-shirt orders. I pressed and packaged 20 shirts, which felt like a huge accomplishment! After that, I tackled some yard work, started a few loads of laundry, and worked on some custom design projects. It was one of those busy-but-satisfying days where I seemed to be constantly moving from one task to the next.

To finish the day, I decided to make something just for myself: a sublimated wind spinner wind chime. Sometimes it’s nice to create something without a deadline attached to it. I’m happy to report that it turned out awesome, and I absolutely love how it looks!
Today was much more relaxed. I spent most of the day unwinding and finished my 35th book of the year. I always feel a little accomplished every time I add another title to my yearly reading list.
Bella also spent some time helping me in her role as sous chef while I grilled chicken for dinner. She takes her supervisory duties very seriously!
I also decided to try something new. As a huge dill pickle fan, I was excited when I spotted Bush’s Dill Pickle Baked Beans at the store. Naturally, they came home with me. The verdict? They were okay. I was hoping for a much stronger dill pickle flavor, and while they weren’t bad, they didn’t really wow me. I’m not sure I’d buy them again.

One thing I will absolutely be making again is the cottage cheese egg salad I prepared for lunches this week. Yes, you read that correctly, cottage cheese egg salad!
Instead of mayonnaise, I blended cottage cheese, a few of the egg yolks, Dijon mustard, seasonings, and a tiny squeeze of lemon juice. Then I mixed that creamy mixture with chopped hard-boiled eggs and red onions. The result was delicious! It was creamy, flavorful, high in protein, and exactly what I was craving. I honestly can’t remember the last time I had egg salad, but this version hit the spot.
My official review: 10/10. Highly recommend.
Now the lunches for the week are prepped and ready to go, which always makes Monday feel a little less stressful.
Tonight, Bella and I plan to settle in, do some binge-watching, and enjoy a quiet evening before another busy week begins. Here’s hoping the coming week is a little less hectic and leaves a bit more room to breathe.
