The night before school is always a mix of emotions, especially after a much-needed two-week winter break. The coffee pot is set☕️, the bags are packed, the lunch menu is planned, and this teacher and her fur baby, Bella🐾, are feeling a little blue😔. We’ve had such a good two weeks filled with rest and relaxation. While I miss my routine and my work family, I’m just not ready to leave Bella alone all day again. I know I’ll miss her terribly,💔 and I’m sure she’ll miss me just as much.

Today was a wonderfully lazy day for us—exactly what Sundays should be! Crockpot Sunday took a little twist this week as I decided to focus on dessert instead of a main course. I “baked” up some apples🍎 in the crockpot for the week. They’re a perfect treat that fits into my plan, and the heavenly aroma of cinnamon and apples filled the house while I read my book 📚and snuggled with Bella. Pure bliss!🥰

For dinner, I made a Tuscan chicken dish with carrots🥕 and tomatoes🍅. It was super easy, thanks to a package mix, but ohhh, it was so delicious! Sometimes simple meals really hit the spot.👩🍳
Now, as the evening winds down, Bella and I are soaking up our last few snuggles of winter break. I’m grateful for the rest we’ve had, but I know tomorrow will come too quickly. 😪
