Today was another busy day! π¨ I started the morning by taking my parents a ground turkey π¦ and zucchini π₯ skillet that they were going to have for lunch. π½οΈ I helped out around their house π‘ and visited for a bit before heading out for a haircut. βοΈπββοΈ It felt so goodβmy hair is so much lighter and more manageable now!

After that, I made a stop at one of my favorite farm stands in North Collins π»π½. I picked up an 8-quart basket of gorgeous Roma tomatoes π to add to the ones from my garden πΏ. I also went out into the field and picked an 8-quart basket of green bell peppers π«βand they were HUGE! π²


Once I got home and took Bella πΆ for our afternoon walk πΆββοΈ, I washed all the veggies π₯ and left them to dry while I curled up with my book π for a bit. Wellβ¦ that βreading timeβ turned into a quick nap π΄. Thatβs okay though! Once I was back up, I cut up and bagged all but three of the green peppers for freezing βοΈ. Theyβll be perfect for soups π² and crockpot recipes all winter long βοΈπ΄.

Iβm also officially prepped and ready for tomorrowβSauce Day 2025! π π« This year, I wonβt be making as much sauce as in previous years since I still have jars left from last year π¦. A smaller batch will be perfect, and I also plan on freezing more of my homegrown tomatoes to make fresh sauce in the winter. Iβm so beyond happy with my bountiful harvests this summer ππ±βthereβs just nothing like cooking with vegetables youβve grown and harvested yourself! π
Now, after a crazy busy day π, Iβm sitting here with a cooling eye mask π©΅ποΈ, trying to ease the pain in my eyes. Still no call π from the specialty pharmacy yet about my eye drops π§βif I donβt hear from them by Monday, Iβll be calling as directed by my doctor.
