Happy Saturday from Spring Break 2025! 🌸🐾

It’s been a few days since I last posted, but that’s because I’ve been soaking up every bit of my Spring Break! Bella and I have been making the most of the beautiful (and sometimes not-so-beautiful) weather with daily outdoor adventures 🌤️🌧️. Between those walks, I’ve been crafting ✂️, cooking 🍳, baking 🧁, and reading 📚—and I just finished Book #18 for the year!

Today, I’m officially declaring it Crockpot Saturday! 🥘 Since tomorrow is Easter and Bella and I will be heading to my parents’ house to celebrate 🐣, I decided to get my cooking done today. Yesterday, I scored a great deal on a big pack of chicken thighs 🍗, so I put them to good use!

Here’s what went into the crockpot magic:
I started with chopped carrots 🥕 and onions 🧅 on the bottom, added a little broth, and then layered on the seasoned chicken thighs (paprika, black pepper, and Italian seasoning). Set it on low for 8 hours and let the crockpot do its thing! When it was done, I whipped up some mashed cauliflower 🥄 and just like that—I had a hearty, delicious dinner and leftovers for lunch all week!

While the crockpot was cooking away, I dove into my crafting stash! 🎨 Today’s creations included:

  • A new air freshener for my car 🚗
  • A potholder for my kitchen 🍽️
  • A fun new tote bag 👜
  • A cute shirt for Easter tomorrow (it’s not white like I wanted, but I made it work!) 👚
  • And a few top-secret projects I can’t share just yet 😉

Now, Bella and I are winding down for the evening 🛋️. We had a rough weather day—windy, rainy, and a bit chaotic—which made Bella pretty antsy today 🐶. She’s finally curled up next to me, and we’re both ready for a cozy, quiet night.
