Happy Crockpot Sunday! Well… sort of. I know, I know—shocking—I didn’t actually use my crockpot today! Instead, I decided to switch things up and try something new, so let’s call today Something New Sunday!
While strolling through the grocery store yesterday, doing my usual weekly shopping, I spotted a package of tofu. I’ve never cooked with tofu before, but in the spirit of trying something different, I thought, Why not? So, after bringing it home, I did a little research and discovered that tofu is often used in stir-fry dishes. That sounded like a solid plan for dinner!

Since I was completely new to cooking with tofu, I looked up how to prepare it. First, I drained the water from the package and pressed the tofu between two cutting boards for about an hour to remove excess moisture. Once it was ready, I cut it into cubes and pan-fried it in olive oil before adding the rest of my stir-fry ingredients. As it cooked, the kitchen filled with a delicious aroma, but the real test was about to come—tasting it!

I wasn’t quite sure what to expect, but to my surprise, it was pretty good! Definitely not chicken, but the tofu absorbed the flavors of the stir-fry sauce really well. I can see why people say it takes on whatever seasonings or sauces you cook it with.
Final verdict? I’d absolutely cook with tofu again! I think I might invest in a tofu press to make the preparation process easier. I also plan to look up more ways to use it since it’s a great, affordable source of protein.
The rest of my Sunday was filled with laundry, working on my professional development class for work, and, of course, getting in some reading time. A productive and tasty day all around!
