Crockpot Sunday & Mid-Winter Blues


Happy Crockpot Sunday, friends! Today’s menu featured a brand-new recipe—Tangy Chicken. It’s a meal that fits within my plan, and I have to say, it was a winner! I’ll admit, I’ve never been a huge fan of BBQ sauce, but the sugar-free one I used surprised me in the best way. And the best part? Leftovers for the week, which means one less thing to worry about as I get back into the swing of work.

But as delicious as the meal was, today carried a bittersweet feeling. Mid-winter break is officially over. It flew by faster than I wanted, and I can’t help but wish I had more time. More time for slow mornings, more time for extra-long snuggles with Bella, and more time for the quiet peace that comes with being home. The weather didn’t cooperate for as many outdoor adventures as I had hoped, but there’s something special about the way Bella and I hunkered down together—her with her stuffies, me with my book.

Speaking of books, I finished my eighth one of the year today! Started it yesterday, finished it today—it was that good. Now, it’s on to book number nine! Reading has always been an escape, but on days like this, when I feel the weight of transition from rest to routine, it becomes a lifeline.
