Crockpot Sunday Recap & Cozy Monday Vibes

Hi friends,

I missed posting about Crockpot Sunday yesterday, and I promise I had a good reason—it was my birthday! 🎉 I spent the afternoon with my family, soaking in all the love and laughter, and then came home to watch the Bills game with my favorite snuggle buddy, Bella. ❤️🤍💙🏈 My birthday wish was for a Bills win, and they delivered! It was such a fun way to end the day.

To keep the Bills spirit alive, I just finished hanging up red, white, and blue lights in my porch windows to light the way to another victory this coming Sunday. Let’s go, Bills!

Crockpot Sunday Highlights

Despite the busy day, I still managed to whip up a cozy meal. I made a boneless turkey breast in the crockpot, paired with mashed cauliflower potatoes. It was the perfect comfort food for a freezing day.

Today’s Menu

Now, for today, I’m making something delicious again—Egg Roll in a Bowl! I’ve been looking forward to making this dish, and I’m excited to have leftovers for the week. It’s quick, hearty, and perfect for this chilly weather. Find the recipe here 👇

A Bonus Day Off

Today, thanks to Martin Luther King Jr. Day, I had an extra day to relax. Bella and I spent most of the day snuggled up on the couch. I’m wrapped up in my new wearable blanket, a thoughtful gift from my parents, and Bella is bundled up in her blanket too.

This is the best invention!
Bella all cozy and warm!

The temperatures are brutally cold right now, with a wind chill making it feel like -3°F. On top of that, a snowstorm is rolling through, so we’re keeping our outdoor trips short and sweet. Tomorrow is forecasted to be even colder with more snow, so we’re staying cozy and safe indoors.

Ready to take Bella out for a potty break.

I hope you’re all staying warm and safe too. Here’s to a great rest of your Monday!

With love,
Julie
