Happy Crockpot Sunday: Comfort Food Edition

Today’s Crockpot Sunday was all about cozy, comforting food to warm both body and soul. On the menu? A delicious twist on a classic: Spaghetti Squash with homemade sauce and meatballs. Let me tell you, it hit the spot! The sauce was something I put together this morning

, and it paired perfectly with the tender squash and flavorful meatballs. It’s a guilt-free comfort meal that still feels indulgent!

But I didn’t stop there—I had some apples begging to be used, so I whipped up a sugar-free apple pie. The smell of cinnamon and apples wafting through the house was pure magic. The pie turned out amazing, but I’ll admit, it left me utterly exhausted.

Why so tired? Well, I’ve been under the weather since midweek. It started with a little congestion and has gradually worsened, leaving me feeling pretty miserable. This weekend has been all about rest, naps, and doing as little as possible (other than cooking, of course).

I’m crossing my fingers that I’ll shake this bug soon because Christmas is just around the corner, and my to-do list is looking daunting. Between decorating, baking, and gift shopping, there’s so much I want to get done.

For now, though, I’m taking it one day at a time and leaning into these small, comforting traditions that make even the toughest days a little brighter. Here’s to better health and productive days ahead!
